By Kyle Robertson This book is pretty well written, with the right amount of recipes, tips and tricks, and full color photos to please anyone looking for something to spice up their cooking.I appreciate the safety tips and first aid instructions at the beginning of the book, as I have had a few mishaps myself when dealing with chilies in the past. There is also a good section containing interesting facts about chilies that anyone who is a chili head can appreciate.The first part of the book is dedicated to basic sauces: Chili Vinegar, Chili Oil, Louisiana-Style Chili Sauce, Louisiana Hot Sauce, Caribbean Habanero Sauce, Salsa, Mango Chutney, and Jams. Then there is a section presenting several very interesting and exotic variations on normal foods that you can kick up a notch with chilies.Lastly, there is a history of familiar chili sauces on the market, and a short list of trade fairs and events for chili enthusiasts.The second part of the book is all about grilling, BBQ sauces, and various ways to use them. It starts off with the basic Ketchup and builds from there to BBQ Sauce, Steak Sauce, Mustard Sauces, and Chicken Wing Sauce. The book finishes with various Mayonnaise Sauces. Mayonnaise? Yes, mayonnaise. While I have only tried White BBQ Sauce a few times, it is a tradition in Alabama and other parts of the south. Mayonnaise is very versatile, and here Nowak gives you a tried and true basic mayo recipe, to which you can develop your own sauce. He provides recipes for Spicy Mayonnaise, Curry, Lime, Herb, and Whiskey.I would recommend this to fellow chili and grill enthusiasts as a reference to keep on hand when you want something a little different than the norm.
